bpc (by Peter Chase), the creative hospitality firm behind Wunderbar, Plateau Lounge & e.a.t. is excited to unveil its latest creations for the Fairmont Queen Elizabeth hotel in Montreal.
From the Quebec focused market, to the Greek inspired Agora to the industry altering “bar chef” driven lounge - each of these unique ideas came from the mind of one individual - Peter Chase.
In 2014 bpc was asked to create a new and exciting food & beverage plan for the Fairmont Queen Elizabeth Hotel in Montreal.

bpc saw the iconic 15,000 square foot Conrad Hilton built Kitchen as a rare opportunity to give Montreal, and really all of Canada, its first market concept within a hotel – this together with an adjacent restaurant made for a unique hotel experience – all exemplifying the best that Quebec has to offer from regional farmers and fisherman, to artisanal craftsmen.
In the place once was home to Les Voyageurs & the Beaver Club, bpc created an outdoor park, indoors - complete with “vendor carts” called the Agora. This multipurpose space allows for small conferences or seasonal activations utilizing the flexible kitchens to create mini indoor festivals even in the dead of winter.
COFFE SHOP & LOUNGE
Activating the front of the hotel was of paramount importance to bpc’s vision to present the city of Montreal with easy access to their beloved hotel, so we added a vibrant coffee shop on one end; balanced by the first ever bar where bartenders “cook” your cocktail the same way that chefs cook your food. This has never been done before. Providing a separation between guests and the bar allows for focused creativity & a truly theatrical presentation of modern mixology.
